Fudge Pecan Pie

1/2 cup butter
3 tablespoon cocoa
3/4 cup hot water
2 cups sugar
1/2 cup flour
1/8 teaspoon salt
1 teaspoon vanilla
5oz. evaporated milk
1 1/4 cup pecans
1 deep dish pie crust 9 inches

Preheat oven and a cookie sheet to 350F. In medium saucepan, melt butter. Add cocoa and stir until dissolved. Add hot water and stir again. With whip blend in sugar, flour, salt, vanilla and evaporated milk. Stir until batter is smooth. Mix in pecans and pour into pie crust. Bake on preheated cookie sheet for 50 minutes or until a knife inserted 1 inch from the edge comes out clean.

Here are a few tips:
To top it off get some real whipping cream, you know the kind you whip up yourself.
Make sure the cocoa is dissolved are the pie will not come out right. If you have large pecans you need to chop them a bit, because when you cut the pie it looks nicer. Always cover the edge of the pie crust with foil are it will burn.

Pecan Pie

1 cup sugar
1/2 cup dark corn syrup
1/4 cup melted butter
3 well beaten eggs
1 1/4 cups pecans
1 9 inch pie crust

Preheat oven and a cookie sheet to 375F. In a medium bowl, stir in the sugar, dark corn syrup, melted butter and well beaten eggs. Stir well, then stir in the pecans and pour into pie crust bake at 375F on cookie sheet for 40 to 45 minutes or until set in middle of pie.

Well I guess you can tell I am from the South having pecans in both the pies. Merry Christmas to all and a Happy New Year.
